I have been asked to share some recipes on the blog, because we're all out here - we're living with pelvic pain, we want to fuel ourselves to we can carry forward. But sometimes it's hard. We want things to be easy, and eat food that makes us feel good.

I often go to TikTok for food inspiration, and today I am sharing a recipe by Cooking with Zainab.

Honey Butter Garlic Chicken

We all have different reasons of why we choose a recipe living with pelvic pain, it may be that we want to eat inflammatory, gluten free, dairy free etc.

Why I chose this recipe:

  • I want to make sure I eat enough protein for how active I am

  • I love chicken

  • It has garlic in it

  • It was an easy recipe

  • AND SUPER TASTY (which is important for me, otherwise I won't eat it)

Welcome to: Meals for Pelvic Health

Now, when I follow a reciepe I don't usually follow it to a T of the measurements, I kinda wing it! But the recipe posted on this TikTok:

  • 600g of chicken thighs - I looove chicken thighs, because they are juicer due to the fat content - but breast can work too

  • 2 tbsp soy sauce

  • 1 tsp garlic powder

  • 1 tsp black pepper

  • 1 tsp sugar (I skipped this and still turned out really tasy)

  • 1 tsp garlic paste

  • 1 tsp ginger paste

  • 70g cornflour (I used arrowstarch)

Mix all of that together in a bowl.

Fry it in a pan until cooked thoroughly.

For the sauce

  • 100g butter (eye measurement for me)

  • 80ml honey

  • 6–8 garlic cloves, finely chopped

  • 2 tsp cornflour mixed with a little water

  • Small squeeze of lemon juice

  • 1/2 tsp salt

  • 1 tsp chilli flakes

  • 2 tsp sesame seeds (skipped these)

Add sauce to chicken and cook until sauce has a good thickness on it. Add more cornflour for thickness, more water for thinness.

I served it with rice (brown for more fibre), edamame, greens, and carrots.

Protein + fibre are both really important for pelvic health, so try this recipe out and let me know how you like it!

Stay radiant, Penny
